Innovative cocktails anyone?

Welcome to The Setai – a destination for a luxurious setting, fine dining and bacon in your cocktails. The Setai has a new mixologist on board by the name of Paul Sevigny and he has created trendy and exotic cocktails for the classic drinkers, along with the daredevil imbibers, to add to the cocktail menu.
These cocktails combine classic ingredients with favorite food items. The first up is a Hickory Old Fashioned. Who would have thought that these ingredients would star on such a cocktail menu – Bacon, Sage-infused Wild Turkey Bourbon, Honey Syrup, Orange Bitter and topped with a flamed orange peel. Next in line – the Asian Picnic - made of Smoked Pork Belly infused with Jack Daniels Bourbon, Chile syrup, compressed watermelon, citrus and shiso.
And who would have thought a cocktail menu needed vegetarian options?! It’s absolutely in order now, and Sevigny’s Saigon Gimlet sounds quite tasty. It brings my love of Asian flavors and fresh Thai basil together with a fragrant combination of thai basil, chile infused vodka, ginger liquor and citrus.
Cocktails range from $14 to $20 plus tax.
While I’m still not sure about these flavor combinations, they sure have sparked my curiosity. Anyone up for a trip to the Setai for some bacon and bourbon? And, if you have tried any of these already, leave a comment and let us know how they were.
Earlier this week, Dine Magazine’s Wine Club was invited to Forte Palm Beach to learn some secrets on how to mix the perfect cocktail. Joshua Liberman shared some of his favorite recipes with our guests as we sampled these delicious concoctions. Cucumber Melon French 75, Elder Flower Gimlet, Blood Orange Negroni and Gin Gin Fizz were all on the menu
Here’s the recipe for the Pomegranate Kiss.
Ingredients:
- 2 oz Vodka
- 1 oz PAMA liquor
- 1 oz pom juice
- 1/2 oz simple syrup
- 1/2 oz lemon juice
- Garnish with 3 rose petals
Directions -
- Combine all ingredients in a collins glass 3/4 full of ice.
- Shake vigorously and strain into a chilled martini glass.
- Garnish with 3 rose petals.

I‘m a man of science but admittedly not a man of supremely accurate wine tasting skills (we leave that to Patrick). So when I read about the trendy Molecular Mixology, my interest was sparked. Apparently, the chemical styles of molecular gastronomy are starting to be applied to the world of booze and breeding a new heard of cool scientists-meet-bartenders.
